This is an absolute easy and tasty chicken dish to make for
dinner.
Ingredients serve 4
2 tsp oil
400 g diced chicken breast
1 chopped brown onion (200g)
2 chopped bacon rashes
250 g sliced mushrooms
¼ cup plain flour (40g)
1 tbls wholegrain mustard
1 cup chicken stock (250ml)
1 tsp salt
½ tsp ground black pepper
½ tsp dried mixed herbs
½ cup thickened cream (125ml)
2 tbls finely chopped parsley
Method
Place oil in a large saucepan over medium heat. Cook the
chicken for approx. 5 minutes and transfer to a plate. Add onion and bacon to
the saucepan and cook for approx. 4 minutes. Add mushrooms and cook for 2
minutes while stirring. Blend the flour and mustard in the pan. Add stock,
salt, pepper and herbs while stirring and bring to the boil. Blend the chicken
in and allow simmering covered for approx. 15 minutes. Add cream and parsley,
cook for approx. 3 minutes until heated through without boiling. Serve with
mashed potatoes.
Note: Replace
chicken breasts with chicken thighs and serve pasta or rice instead of mashed
potatoes.
