These sweet tarts are superb for dessert or afternoon tea.
Ingredients
Shortbread shells
Caramel custard
Italian meringue
Method
Fill shortbread shells with caramel custard and pipe
meringue in top. Place tarts under the grill until lightly coloured.
Note: Try with
blueberry compote or jam in the bottom and passionfruit curd on top before
piping with the meringue.
