Banana Orange and Lemon Thyme Scones

These superb fruit scones are ideal for breakfast or morning tea.


Ingredients make 14

500 g self raising flour
75 g caster sugar
10 g salt
75 g butter
200 g banana puree
125 g milk
1 orange zest and pulp (75g)
2 tsp finely chopped lemon thyme

Method

Preheat oven to 200ÂșC fan forced (220C normal bake). Place flour, sugar and salt in a bowl. Cut butter in small cubes and rub into the flour mix with your hands. In another bowl combine banana puree, milk, lemon thyme orange zest and pulp. Add this mix to the flour and combine. Place dough on a workbench dusted with flour and roll or press out to a thickness of approx 25 mm. Cut scones with a 5 cm. round cutter and place on lightly greased flat baking tray. Bake in the oven approx 12 min. and dust with icing sugar.


Note: Try normal thyme or basil instead of lemon thyme.
