The Hurricane Cocktail
A classic cocktail from New Orleans created by Pat O’Brian in 1940 and it delivers the same strike as a tropical storm. He used a notable four ounces of rum to make a Hurricane blended with sweet and sour fruit juices for a delicious although deadly concoction. The legend tells among the other shortages endured during the War was of good whiskey. Scotch was so hard to come by, that liquor distributors were able to dictate terms that sound almost insane. In an effort to unload excess inventory, they would require customers to buy 50 cases of rum in order to get a single case of Scotch. If you in reality want to capture the spirit of Mardi Gras make a Hurricane.
Traditional Hurricane is 2 oz light rum, 2 oz dark rum, 2 oz passion fruit juice, 1 oz orange juice, ½ oz fresh lime juice, 1 tablespoon simple syrup and 1 tablespoon grenadine. Shake all ingredients in a cocktail shaker with ice and strain into a Hurricane glass filled with ice. Garnish with a cherry and an orange slice.

Chicken and Mushroom Cacciatore
In Italian cuisine, “pollo alla cacciatore” refers to a meal prepared “hunter-style” made with braised chicken and ingredients such as tomatoes, onions, mushrooms, herbs, bell pepper and sometimes wine. There are many different variations of this dish based upon ingredients available in specific regions. A basic cacciatore recipe usually begins with a couple of tablespoons of olive oil heated in a large frying pan. Chicken parts, dusted with salt and pepper are seared in the oil for three to four minutes on each side. The chicken is removed from the pan and most of the fat poured off. The remaining fat is used to fry the onions, mushrooms, peppers or other vegetables for several minutes. A small can of peeled tomatoes is added to the pan along with some oregano and a half cup of dry red wine. The seared chicken parts are returned to the pan which is then covered. The dish is complete after about an hour at a very low simmer. Cacciatore is often served with rustic bread or some pasta on the side.
