These lovable spicy buttermilk and strawberry scones are
excellent for morning or afternoon tea.
Ingredients make 15
scones
600 g self raising flour
10 g salt
200 g butter
400 g buttermilk
75 g brown sugar
125 g strawberry finely chopped
2 tbls mixed spice
Method
Preheat oven to 200ÂșC fan forced (220C normal bake). Place
flour and salt in a bowl. Cut butter in small cubes and rub into the flour mix
with your hands. Combine buttermilk, sugar, strawberries and mixed spice in
another bowl. Add this blend to the flour mixture and combine evenly. Place on
a workbench dusted with flour and roll or press out to a thickness of approx
25mm. Cut scones with a 5 cm. round cutter. Place on lightly greased flat
baking tray and bake in the oven approx 12 min. Dust with icing sugar.
Note: Try
substituting strawberries with mixed dried fruit.
