Quick Chicken, Bacon and Vegetable Casserole

This simple chicken dish with plenty of flavour is easy to make for dinner.


Ingredients serve 6

1 chopped brown onion (200g)
3 finely chopped pieces of bacon
1 chopped celery stalk (150g)
420 g carrots
500 g chicken stock
500 g milk
2 tbls flour
1 tbls mixed dried herbs
2 tsp salt
1 tsp ground white pepper
600 g chicken breast
200 g cauliflower
200 g broccoli

Method

Place oil in a large saucepan over medium heat. Cook onion, bacon and celery for approx. 5 minutes. Add carrots, stock, milk, flour, herbs, salt, pepper and chicken, mix evenly and bring to the boil. Lower the heat and simmer uncovered for approx. 10 minutes. Add cauliflower and broccoli and simmer for approx. 15 minutes. Serve with mashed potatoes.


Note: Replace chicken breasts with chicken thighs and serve pasta instead of mashed potatoes.
