There is an abundance of different methods and recipes how
to make honeycomb but this is the one I find supreme.
Ingredients
150 g caster sugar
50 g honey
50 g glucose
30 ml water
1 tbls bicarbonate of soda (12g)
Method
Place sugar, honey, glucose and water in a pot and combine.
Wash the edge of the pot with clean cold water and bring the mixture to the
boil. Allow it to boil until it reaches156ยบ C and take of the heat. Mix the sifted
bicarbonate of soda in and pour this mixture quickly onto a greased or baking
paper lined tray. Allow cooling until hard before breaking or cutting into
pieces. Place honeycomb pieces in an airtight container.
Note: Cold
honeycomb can be crushed and added to desserts such as ice creams, syllabubs
and trifles. Try dipping the honeycomb in your favourite dark, milk or white
chocolate.
