Fruit of the Forest Gateau

This is a divine cake as a dessert or for afternoon tea.


Ingredients serve 14 -16

800 g fruit of the forest mix
1500 g whipped cream
800 g chocolate sponge
900 g dark chocolate shavings
Marsala

Method

Cut the 30 cm round chocolate sponge in three layer and place the bottom layer on a cake tray. Sprinkle Marsala on each layer. Spread fruit of the forest mix evenly on bottom layer surrounded with whipped cream. Place another layer of Marsala infused sponge on top and spread a layer of whipped cream. Lay last Marsala infused layer of sponge on top and cover the Gateaux with whipped cream. Wrap the side with dark chocolate shavings and divide the cake 14-16 pieces. Decorate the middle on top with dark chocolate shavings and sift some icing sugar on top. Pipe a rosette on each slice, decorate with a sliced strawberry and a blueberry.

Fruit of the forest mix

Ingredients

150 g blackberries
150 g raspberries
150 g strawberries
150 g blueberries
100 ml water
100 g caster sugar
40 g cornflour
70 ml Marsala

Method

Place the berries, water and sugar in a saucepan over medium heat. Bring to the boil and allow cooking while stirring for approx. 4 minutes. Mix cornflour and Marsala in a bowl and add to the boiling fruit mixture. Pour the cooked mixture into a container and cover with food wrap. Allow cooling in the fridge before use.


Note: Try using brand or port wine instead of Marsala in the cake.
