Apple and Blueberry Friands

These apple and blueberry friands are a sweet treat perfect for an indulgent time out. Apple and blueberry provide a burst of flavour and give the friands a moist fluffiness that’s sure to impress dessert fans.


Ingredients make 12

½ cup plain white flour (80 g)
¼ cup white self-raising flour (40 g)
½ cup icing sugar (110 g)
1 cup almond meal (100 g)
1 tsp cinnamon (3 g)
½ cup milk (125 ml)
¼ cup vegetable oil (55 g)
1 cup diced apple (150 g)
½ cup blueberries (75 g)
5 egg whites

Method

Preheat oven to 180º C normal bake (160º C fan forced). Lightly spray nonstick oval friand tins with oil. Combine flours, icing sugar, almond meal and cinnamon in a large mixing bowl. Add milk and oil, mix until well blended. Blend apple and blueberries into the mixture. Whisk egg whites until soft peak is reached and carefully fold into the apple and blueberry mixture. Spoon or pipe the mix into the prepared moulds and bake for approx. 30 minutes. Allow cooling for 10 minutes before removing from the tins. Serve dusted with icing sugar.


Note: If you can’t get friand tins try using muffin tin instead as an alternative.
