This crispy Australian slice is excellent
for kids to have fun helping in the kitchen. Wrap the slices in cellophane and
use as Christmas presents.
Ingredients
make 8 slices
40 g long shredded coconut
40 g toasted almond slivers
40 g toasted and finely chopped pecan nuts
165 g mixed fruit
80 g Kellogg’s rice bubbles
420 g white chocolate
30 g shredded coconut for topping
Method
Chop pecan nuts and cherries and place
together with coconut, fruit, almonds, pecans and rice bubbles in a bowl and
mix evenly. Melt chocolate and pour into the dry ingredients and combine
evenly. Place mixture in a baking paper lined 18 x 28 cm tray. Press evenly on
top of the mixture with a flat hand or by using a rolling pin. Place 30 g
shredded coconut on top and press again. Place the slice in the fridge for at
least 15 minutes. Remove from the fridge and cut in 8 slices and keep stored in
closed containers in the fridge.
Note: Alternative to the slice the mixture can be placed in paper cups instead.
Mixed fruit is a mixture of sultanas, raisins, currants, cherries, lemon and
orange peel.
