Fruit mince pie is a small spicy sweet fruit
pie traditionally served during the Christmas season made with a spicy dried fruit
mince mix baked in shortbread.

Method
Roll shortbread out to 3 mm thickness and
fill the bottom of some small pie tins. Place some fruit mince mixture in the
bottom and cover with more shortbread or a piped biscuit mixture. Sprinkle some
white sugar on top and bake in a preheated 180ÂșC oven normal bake for approx. 15 minutes.
Allow cooling before decorating with chocolate and icing sugar.
Note: Fruit mince can be bought in most supermarkets.
