Semolina Bread

Semolina flour is a stronger bread flour and is typically made from Durum wheat.


Ingredients makes 1 loaf

300 g water
50 g olive oil
15 g caster sugar
10 g salt
1 packet dried yeast (8g)
500 g semolina flour

Method

Place all the ingredients in a mixing bowl and mix to dough. Knead dough by machine or hand until gluten is developed approx. 8 minutes. Rest the dough covered for approx. 90 minutes. Place the dough on a lightly floured table. Deflate the dough and form a long shape. Roll the dough in Semolina flour and place on a baking tray. Cover with a tea towel and allow 90 minutes proofing. Preheat oven to 200ยบ C normal bake. Remove the cover and make a few cuttings with a sharp knife. Bake for approx. 40 minutes. Allow cooling before cutting and serving.


Note: This is a superb bread with soup served fresh or toasted.
