Curried Apple and Celery Soup

Nice and spicy soup for the cold winter nights.


Ingredients serve 4 – 6

1 tbls oil
1 tsp minced garlic or ginger
2 chopped brown onions (300g)
2 chopped celery stalks (170g)
2 cored and chopped apples (350g)
2 tbls plain flour
2 tbls curry powder
1 liter chicken or vegetable stock
1 tsp salt

Method

Place oil in a large saucepan over medium heat and cook the onion, garlic, celery and apple for 3 minutes. Add flour and curry powder and cook for 2 minutes while stirring. Add the stock and salt, bring to the boil while occasionally stirring. Simmer uncovered for approx. 20 minutes. Remove from the heat and puree with a stick blender until smooth. Reheat the soup and serve in preheated bowls. Add a dollop of yogurt, chopped chives and croutons.


Note: Try pears or potatoes instead of apples.
