Deconstructed Apple and Blackberry Crumble

This recipe is a contemporary way to serve a cold apple crumble in the warm summer days.



Ingredients serve 6

Crumble ingredients

40 g butter
60 g brown sugar
15 g chopped walnuts
90 g wholemeal flour

Method

Preheat oven to 200ยบ C normal bake. Place butter, brown sugar, walnuts and flour in a bowl and mix until it resembles breadcrumbs. Spread mixture on a flat baking tray and bake in the oven until crispy for approx. 9 minutes. Remove from the oven and crumble the mixture.

Apple and Blackberry compote

200 g blackberry
600 g peeled and cored apples
100 g raw sugar
1 tsp mixed spice

Method

Cut the apples in small 2 cm pieces and place in a bowl. Add blackberry, sugar and mixed spice, blend evenly and place in a baking dish. Bake in the oven for approx. 25 minutes.

To assemble the dish, place warm or cold fruit compote in the middle of a plate. Place two tablespoons crumble mix on the plate and drizzle with icing sugar. Place a scoop of vanilla ice cream and serve straight away.


Note: Add other ingredients to the dish such as toasted nuts, sultanas or ginger.
