Wholemeal and Seed Soda Bread

You can create a beautiful smell in the kitchen when making this healthy quick bread at home.


Ingredients make 1 loaf

125 g plain flour
350 g wholemeal flour, plus extra to dust
2 tsp bicarbonate of soda
1 tsp salt
75g pepita kernels
80g sunflower kernels
1 tbls poppy seeds
1 tbls sesame seeds
1 tbls flax seed
400 ml buttermilk

Method

Preheat oven to 230ºC. Mix together the dry ingredients in a large bowl. Add the buttermilk and working from the centre mix with your hands making dough. Turn mixture out onto a floured board and knead until combined. Form a large round ball and place on a baking sheet or a lightly floured baking tray. Cut a deep cross and bake for 15 min. Reduce oven heat to 200 ºC and bake for approx. 30 minutes or until the bread is cooked and sounds hollow when tapped at the base.


Note: You can toast the seeds before adding to the bread for extra nutty flavours.
