Coca Cola Rum and Sultana Scones

These scones are alike other cream scones with the addition of rum and are very easy to make.


Ingredients make 14

125 g sultanas
90 ml rum
500 g self raising flour
10 g salt
200 g Coca Cola
200 g fresh cream

Method

Place sultanas and rum in a closed container to marinate for at least 24 hours. Preheat oven to 200ÂșC fan forced (220C normal bake). Place self raising flour, salt in a bowl and combine. Blend coca cola, sultana mixture and cream in another bowl. Pour the liquid into the flour and mix with a plastic scraper or hand. Turn the scone dough out on a floured table, roll or pat the scone dough to a thickness of 25 mm and cut scones out with a 5 cm scone cutter and place on a slightly floured tray with some distance in between. Bake in the oven on for approx. 12 minutes. After cooking sift some icing sugar on top of the scones.


Note: It is always important to keep the liquid ingredients for scones cold.
