This attractive modern Italian pasta and tomato dish is an excellent choice for dinner.
Chicken in tomato sauce ingredients
1 finely chopped onion
1 tsp minced garlic
1000 g chopped chicken thigh
2 tin chopped peeled tomatoes (800g)
250 g tomato paste
1 tbls dried basil
1 tbls Italian dried herbs
1 tsp salt
1 tsp black ground pepper
500 ml white wine
500 ml chicken stock
Place 2 tablespoon oil in a large saucepan over medium heat, cook the onion and garlic until soft while stirring. Add chicken and cook for approx 10 minutes occasionally stirring, add the tomatoes, tomato paste, herbs, salt, pepper, wine and stock. Bring to the boil and cover the saucepan. Simmer for approx. 40 minutes.
Pasta ingredients serve 6
2 tbls olive oil
1 small red finely chopped capsicum
1 finely chopped onion (100g)
1 tsp minced garlic
500 g Roma tomatoes halved
6 birds nest of angel hair pasta (210 g)
20 fresh basil leaves
Method
Place water in a saucepan, season with chicken stock and salt. Bring the water to the boil. Place angel hair pasta into the boiling water and continue to cook approx. 4 minutes. Strain pasta in a colander. Place 2 tablespoon olive oil in a frying pan over medium heat. Cook onion and garlic until soft. Add capsicum and tomatoes and cook for approx. 3 minutes while constantly moving the pan. Add torn basil leaves and season with salt and pepper. Add strained pasta and mix and mix all ingredients together. Place a portion of the pasta dish on a plate and top with chicken in tomato sauce. Sprinkle chopped parsley, grated parmesan cheese and cracked pepper on top.
Note: Angel hair pasta is a long, thin noodle with a round shape, also known as capellini or capelli d'angelo. Pecorino cheese can be used as an alternative.
