This is the ultimate mousse for chocolate lovers with the
combination of dark, milk and white chocolate in the same serve.
Ingredients make 10
serve
60 g chopped white chocolate
60 g chopped milk chocolate
60 g chopped dark chocolate
9 eggs separated
180 g caster sugar
900 g cream
Method
Pour water in a saucepan and place on medium heat and bring
to a simmer. Place each chocolate in separate bowls over the simmering water
without the bowl touching the water. Stir until the chocolate is melted, remove
from the heat and set aside. Place egg whites and half the sugar in a bowl and
whisk until a soft peak is formed. Place egg yolks in a separate bowl with the
remainder of the sugar and whisk until light and creamy. Whisk cream until soft
peak. Blend whisked egg whites, egg yolk and cream carefully and evenly
together. Divide the mousse into three equal portions and stir each chocolate
into each separate egg mixture until combined. Spoon the dark chocolate mouse
into the bottom third of the glasses, then the milk chocolate and finally the
white chocolate mix. Decorate with a cream rosette, strawberry fan and a
chocolate scroll. Allow cooling for at least 2 hours before serving.
Note: Try to make
the mousse in a terrine mold.
