Chocolate Indulgence Muffins

These luscious chocolate muffins with the addition dates, pecan nuts and chopped chocolate are great any time of day.

Ingredients make 8

110 g self raising flour
50 g plain flour
40 g cocoa powder
200 g caster sugar
850 g melted butter
145 g milk
40 ml cream
1 egg
40 g chopped pecan nuts
600 g chopped dark chocolate
55 g chopped dates

Method

Preheat the oven to 180ÂșC normal bake. Sift flours and cocoa powder into a large mixing bowl. Add sugar and blend. Add melted butter, milk and cream. Beat with an electrical mixer for approx. 7 minutes. Add eggs one at a time and beat until incorporated between additions. Blend in the pecans, chocolate and dates. Place mixture in paper lined muffin tin and drizzle crumble or nuts on top. Bake for approx. 25 minutes and allow cooling for 10 minutes before removing from the tin.

Note: Try using white or milk chocolate chips instead of dark or a mixture.
