Chicken paprikash or paprika chicken is one of the Hungarian
meals famous for using sweet paprika and can be made with a paprika roux or
using cream to achieve a creamy stew similar to Hungarian goulash.
Ingredients
2 tbls butter
1 finely chopped onion (150g)
2 tsp minced garlic
200 g sliced mushrooms
90 g sweet paprika
2000 g diced chicken thigh and breast
250 g tomato paste
400 g diced tomatoes or passata
500 g chicken stock
2 tsp salt
1 tsp black ground pepper
600 ml cream
Method
Place butter, onion, garlic and mushrooms in a large saucepan
on medium heat and cook while occasional stirring for approx. 6 minutes. Add
paprika and cook for 1 minute while stirring. Add chicken and cook for 5
minutes while stirring. Add tomato paste, tomatoes, stock salt and pepper, cook
while stirring for 5 minutes. Place the mixture in a slow cooker and cook on
high for 4 hours or low for 8 hours. Add cream and cook for a further 30
minutes. Serve with tagliatelle pasta and sprinkle with chopped parsley.
Note: Instead of cooking in a slow cooker, bring the mixture covered to the boil and simmer for approx. 50 minutes before adding cream.
