Gluten Free Almond Press Cookies

These conventional pressed cookies have a delicious almond flavour and are easy to make at home.


Ingredients make 80 cookies

250 g almond meal
1 tbls coconut or rice flour
125 g butter
125 g caster sugar
1 egg

Method

Preheat oven to 170ÂșC normal bake. Place butter and sugar in a mixing bowl. Beat until light and creamy. Add egg and mix well. Blend almond meal and rice flour before adding to the mixture. Load the cookie press from the backside and seal the gun with the trigger. Press the cookie mixture onto baking paper or greased baking trays. You can place ingredients on top of the cookies such as nuts, chocolate or dried fruits otherwise leave them plain. Bake for approx. 10 minutes. Remove cookies from the oven and allow cooling before placing in closed containers.


Note: You can add other flavours such as orange and lemon zest and if you are using unsalted butter add ½ tsp salt.
