Spicy Banana Cake

This is a superb cake slice for morning or afternoon tea.


Ingredients make 18 slices

2¾ cups plain flour (440g)
2 tsp baking powder
1 tsp salt
2 tbls mixed spice
2 cups mashed bananas (560g)
2 eggs (100g)
1½ cup brown sugar (240g)
¾ cup melted butter (150g)

Cinnamon sugar for topping

2 tbls granulated sugar
1 tsp cinnamon

Method

Preheat oven to 160ÂșC normal bake. Place flour, baking powder, salt and mixed spice in a bowl and combine. Place mashed banana, eggs, sugar and melted butter in another bowl and mix evenly. Add flour mixture to the banana mixture and combine. Place mixture evenly in a baking paper lined 28 x 33 cm cake tin. Combine granulated sugar and cinnamon. Sprinkle this on top and bake the cake in the oven for approx. 35 minutes. Allow cooling before cutting in slices.

Note: For a topping variation try making a cheese and buttercream mixture and spread on top before slicing.
