This is an excellent Hawaiian quick bread filled with the all flavours of the tropics included banana, pineapple, coconut and walnuts.
½ cup soft butter (115g)
1 cup caster sugar (200g)
2 eggs (100g)
2 ripe mashed banana (225g)
¼ Cup milk (60ml)
1 tbls orange peel
1 tsp vanilla extract
1½ cup plain flour (250g)
½ tsp salt (3g)
1 tsp baking soda (5g)
1 cup toasted desiccated coconut (80g)
½ cup chopped pecan nuts (60g)
½ cup crushed pineapple (120g)
Method
Preheat oven to 160ÂșC normal bake. Place butter and sugar in a large bowl and mix until creamy. Add the eggs and mix evenly. Add banana, milk, orange peel and vanilla and combine. Place flour, salt and soda in a bowl and combine. Add flour mixture to the banana mixture and combine. Fold coconut, pecan nuts and pineapple into the mixture. Place mixture in a greased bread tin and bake in the oven for approx. 75 minutes. Allow the bread to cool in the tins for 5 minutes before removing and place on a wire. Allow cooling for at least 30 minutes before cutting and serving.
Note: Try other varieties of nuts instead of pecan such as walnuts, almonds and macadamia.
