2 ripe mashed banana (225g)
¼ Cup milk (60ml)
1 tbls orange peel
1 tsp vanilla extract
1½ cup plain flour (250g)

1 cup toasted desiccated coconut (80g)
½ cup chopped pecan nuts (60g)
½ cup crushed pineapple (120g)

Method

Preheat oven to 160ÂșC normal bake. Place butter and sugar in a large bowl and mix until creamy. Add the eggs and mix evenly. Add banana, milk, orange peel and vanilla and combine. Place flour, salt and soda in a bowl and combine. Add flour mixture to the banana mixture and combine. Fold coconut, pecan nuts and pineapple into the mixture.
