This tender chicken dish develops superb flavours when cooked in a slow cooker.
2 tbls butter or oil
1 small chopped brown onion (150)
4 large field mushrooms (100g)
4 slices finely chopped bacon (300g)
500 ml chicken stock
1 tsp dried mixed herbs
½ tsp black ground pepper
2 tbls sweet paprika
8 skinless drumsticks (1200g)
Method
Place the oil, onion, mushrooms and bacon in a saucepan on medium heat and cook for approx. 7 minutes. Add chicken stock, mixed herbs, pepper and paprika and mix until combined. Transfer to a 4.5 liter slow cooker and place the chicken drumsticks in the mixture. Cook covered for 8 hours on low. Serve warm with penne pasta and bread.
Note: Try serving this dish with boiled potatoes instead of pasta.
