Banana Wholemeal Bread

This moist healthy banana bread is perfect for breakfast with excellent nutty flavours from wholemeal.


Ingredients make 1 loaf

280 g wholemeal flour
1 tsp salt
1 tsp bicarbonate of soda
100 ml buttermilk
4 mashed ripe bananas (375g)
⅓ cup honey (125g)
2 eggs (100g)

Method

Preheat oven to 170ÂșC normal bake. Place flour, salt and soda in a bowl and combine. Place mashed banana, honey and eggs in another bowl and mix evenly. Add flour mixture to the banana mixture and combine. Place mixture in a greased bread tin and bake in the oven for approx. 1 hour. Allow the bread to cool in the tins for 5 minutes before removing and place on a wire. Allow cooling for at least 30 minutes before cutting and serving.

Note: To make more wholesome banana bread add 60 g chopped nuts such as pecan or walnuts and for extended flavours add other ingredients such as mixed spice, poppy seeds, chocolate chips, pineapple, apple and coconut.
