Banana Wholemeal and Pecan Scones

This is an easy scone to make with good wholesome banana and a nutty flavour.


Ingredients make 15

300 g wholemeal flour
230 g plain flour
30 g baking powder
5 g cinnamon
10 g salt
120 g brown sugar
150 g banana puree
70 g vegetable oil
70 g cream
150 g lemonade
100 g roasted and finely chopped pecan nuts

Method

Preheat oven to 200ºC fan forced (220ºC normal bake). Place flour, baking powder, cinnamon, salt, sugar in a bowl and combine. In another bowl combine banana puree, oil, cream, lemonade and nuts. Add this mix to the flour and combine with a scraper or hands. Don’t over mix which will make the scones tough. Place on a workbench dusted with flour and roll or press out to a thickness of approx 25mm. Cut scones with a cutter 5 cm. in diameter. Place on lightly greased flat baking tray. Bake in the oven approx 12 min. Dust with icing sugar.

Note: Substitute pecan nuts with your favourite toasted nuts such as walnuts, almonds or peanuts.
