These gorgeous moist berry muffins with cinnamon sugar on top are excellent at anytime of the day.
2¼ cups plain flour (360g)
2 tsp baking powder
1 tsp salt
1 tsp ground cinnamon
2 ripe mashed bananas (240g)
2 eggs (100g)
¾ cup brown sugar (120g)
120 ml vegetable oil

1½ cup mixed berries (210g)

Method
Preheat oven to 180ÂșC normal bake. Place flour, baking powder, salt and cinnamon in a bowl and combine. Place mashed banana, eggs, sugar and oil in another bowl and mix evenly. Add flour mixture to the banana mixture and combine. Add mixed berries and blend until batter is evenly mixed. Spoon into paper cup filled muffin tins. Combine granulated sugar and cinnamon. Sprinkle this on top of the muffins. Bake muffins in the oven for approx. 30 minutes. Allow the muffins to cool in the tins for 5 minutes before removing.
Note: Mixed berries are a mixture of fruit such as raspberries, blackberries and blueberries. For a topping variation try mixing 1 tablespoon orange or lemon zest with the sugar.
