Basically a vegetable soup is a healthy meal anytime and the soup can be also used as a base for a chicken soup.
1 tbls oil
1 leek (300g)
1 finely chopped brown onion (150g)
2 peeled and sliced carrots (350g)
2 sliced celery stalk (250g)
2 liter vegetable stock
400 g peeled and chopped pumpkin
2 peeled and chopped potatoes (300g)
1 tbls tomato paste
1 tsp salt
½ tsp black ground pepper
1 tbls mixed dried herbs
Method
Place oil in a large soup pot over medium heat. Cook the onion and leek until soft. Add the other ingredients and bring to the boil. Simmer covered for approx. 40 minutes. Serve in bowl with crusty bread.
Note: Add other ingredients such as zucchini, ginger, garlic, noodles, lentils, parsley, coriander or beans.
