These scones have excellent fruity and mint flavours by using strawberry and chocolate mint leaves.
470 g self raising flour
85 g caster sugar
10 g salt
135 g butter
265 g buttermilk
200 g strawberry finely chopped
8 g finely chopped fresh chocolate mint leaves
Method
Preheat oven to 200ÂșC fan forced (220C normal bake). Place flour, sugar and salt in a bowl. Cut butter into small cubes and rub into the flour mix with your hands. In another bowl combine buttermilk, strawberries and chocolate mint. Add liquid mixture into the flour and combine with a scraper or hands. Place on a workbench dusted with flour and roll or press out to a thickness of approx 25mm. Cut scones with a cutter 5 cm. in diameter. Place on lightly greased flat baking tray. Bake in the oven approx 12 min. dust with icing sugar.
Note: If you can’t get chocolate mint leaves use spearmint leaves and maybe add 100 g chopped chocolate chip.
