Orange and Ginger Muffins

These healthy muffins without egg are excellent for breakfast or morning tea.


Ingredients make 6

1 peeled seedless orange and chopped (150g)
¼ cup orange juice (60ml)
½ cup chopped dates (90g)
½ cup butter (125g)
½ cup raw unfiltered honey (150g)
1¼ cup whole wheat flour (200g)
1 tsp ground ginger
1 tsp ground cinnamon
1 tsp baking powder
1 tsp baking soda

Instructions

Preheat oven to 180ÂșC degrees. Place the chopped orange in the food processor bowl and pulse until completely smooth. Add orange juice, dates, butter and honey and pulse again to combine. Place flour, ginger, cinnamon, baking powder and soda in a mixing bowl. Mix the dry ingredients until evenly blended. Add the dry mix to the processor bowl and blend until evenly mixed. Scoop into prepared paper lined muffin tins. Bake for approx. 25 minutes. Allow cooling before taking the muffins out of the tin.

Note: Try adding other ingredients such as chopped walnuts, pecan and macadamia nuts.
