Fried Pork with Parsley Sauce

This dish is easy to make and the results is well worth it. The majority of people eat fried pork as a main dish and this high protein dish would be a great addition to your diet in moderation.



Ingredients serve 4

700 g pork rashers
120 g carrots
150 g broccoli
1 bunch of parsley
400 g potato
600 ml milk
¼ cup plain flour (50 g)
1½ tbls butter (50 g)
½ tsp salt
¼ tsp white pepper

Method

Boil new or chat potatoes for 20 min. Steam carrot strips and broccoli for the last 8 min.
Meanwhile place some butter in a hot frying pan and cook the pork rashers until brown and crispy.
Melt butter in a saucepan, add salt, pepper and plain flour and whisk together.
Add milk and bring to the boil while occasionally whisking.
Add finely chopped parsley and remove from heat.
Arrange on a plate and serve while warm.

Note: Pork rashers taste best straight from the pan. Consider proper ventilation in the kitchen when frying.  Boil or microwave the vegetables as an alternative to steaming.
