Potato Wedges

Turning the humble potato into delicious wedges is the supreme simple side dish and is wonderful with anything from a home made burger to your favourite grilled chicken. I have great success with these at anytime for entertaining.

Ingredients serve 6

1 kg potatoes
¼ cup olive oil
½ tsp salt
¼ tsp sweet paprika
¼ tsp black ground pepper
½ tsp dried oregano
½ tsp dried sage
½ tsp dried basil

Method

Preheat oven to 200ºC.
Wash and cut each potato into 6 – 8 wedges, dry and place in a large bowl then add olive oil and mix evenly.
Mix all dry ingredients in a bowl, drizzle over potato and toss.
Empty bowl of potato wedges onto a baking tray and spread evenly.
Bake on 215ºC for approx. 45 min. until golden brown and crispy.

Note: Use as a side dish or an entre with a dip.
