Chicken Mince Patties

If you like chicken and burgers try making these delightful patties and enjoy hot for dinner or cold for lunch served with salad or vegetable.



Ingredients serve 4

¼ cup vegetable oil (60 ml)
1 onion chopped finely
1 fennel bulb chopped finely
1 clove garlic crushed
1 sweet potato (600 g)
1 tbls butter (20 g)
Salt
Pepper
500 g chicken mince
⅓ cup breadcrumbs (25g)
¾ cup cream (185 ml) 
2 tbls fresh tarragon chopped

Method

Heat oil in a frying pan.  Sauté the onion, fennel and garlic and cook for 5 min. Put mixture into a bowl and clean pan.
Cook sweet potato until tender, add butter and mash until smooth. Add salt and pepper to taste. Cover to keep warm.
Add chicken mince and breadcrumb to the fennel mixture, add salt and pepper; mix well.
Shape chicken mix into 8 portions.
Heat oil in frying pan and cook for 3 minutes until brown and cooked.
Store cooked patties on a covered plate in warm oven.  Clean the frying pan.
Place the cream into the frying pan and simmer, add tarragon simmer for a few min, add salt and pepper to taste.
Serve the sweet potato with patties on top and drizzle with tarragon sauce, serve hot.

Note: Pre cooked mashed sweet potato can be bought from your local supermarket.
