Corn Fritter Salad

Corn fritters are a savoury snack and are traditionally a mixture of corn kernels, egg, flour, milk and butter, which can be fried or baked. This delicious recipe for corn fritters is a real pleasure and it's also vegetarian. The batter takes only minutes to stir together and is an easy wonderful treat used as an appetizer, snack or finger food.



Ingredients serve 6

¾cup self raising flour (130 g)
1 tsp curry powder (5 g)
1 tbls caster sugar (20 g)
1 tsp of salt
Pinch of pepper
2 eggs
½cup milk (125 ml)
2 cups corn kernels (400 g)
1 finely chopped red capsicum
1 finely chopped red onion
1 tbls finely chopped parsley

Method

Mix the dry ingredients together in a bowl.
Whisk together the eggs and milk mix into the dry ingredients to make an even batter.
Fold in the corn kernels, chopped capsicum, onion, and parsley.
Heat the oil in a non-stick frying pan over a medium heat, add 2 tablespoons of the corn fritter batter into the pan and cook for 3 minutes on each side or until golden brown.
Lay four lettuce leaves on a plate place thin slices of tomatoes, cucumber and radish on top. Arrange the hot cooked corn fritter on the fresh salad.

Note: Cooked Corn Fritters can also be frozen and reheated on the frying pan to make it crispy. Corn Fritters can also be cooked on the BBQ hot plate.
