Chicken Fried Rice

Fried rice is an accepted part of Asian cooking and is made from steamed rice stir fried in a wok with other ingredients. A home cooked fried rice it is mostly made with leftovers with much variation. This one is easy and quick and can also be prepared in advance.


Ingredients Serves 2

1 cooked chicken breast (300 g)
50 g unsalted butter
100 ml sesame oil
½ chopped onion
50g diced red capsicum
300 g cooked rice
200 g mixed vegetables
2 eggs

Method

Melt unsalted butter in a wok, add sesame oil.
Fry the onion and add capsicum.
Dice the chicken breast and add to the wok.
Add in rice while stirring.
When evenly hot add vegetables and mix.
Clear a space one side of the wok and add the eggs while combining with the other ingredients.
Continue to stir until suitably hot for approx two min. add seasoning to taste.
Serve warm on a plate.

Note: Using sesame seed oil gives the dish a unique flavour however soy sauce or a sweet chili sauce can be used according to taste.
Pre cooked beef, pork or lamb may be used as a substitute to chicken to be enjoyed anytime of day.
