Cajun Chicken

This is an exceedingly delicious, decadent chicken dish with salad. It’s a cinch to throw together and if you don’t have prepared Cajun spice in your cabinet, throw a few spices together to make your own combination. Cajun spice mixtures use diverse combinations of ingredients, however stick to the basics like cayenne pepper, paprika, white pepper, and garlic or onion powder, just get involve and enjoy.


Ingredients serve 6

3 Chicken Breast (1kg)
Cajun Seasoning
Olive Oil

Method

Put one tablespoon of olive oil per chicken breast in a baking dish. Turn the chicken breast in oil. Sprinkle the Cajun seasoning on the entire chicken breast and rub in.
Cover the dish with food wrap and store in fridge for two hours.
Heat some oil in a large frying pan. Seal the marinated chicken breast on both sides.
Place the pan in a pre heated oven on 160˚ and cook for 20- 25 min. and allow the chicken breasts to stand at least ten minutes before cutting.
Serve and arrange the thinly sliced Cajun chicken with salad.


Note:  Consider the amount of seasoning you use as Cajun can be too spicy for young children. For a wholesome flavour, freeze the uncooked marinated chicken breast in a plastic freezer bag.
