Beef Stroganoff

Beef Stroganoff is a classic Russian dish consisting of strips of lean beef sautéed and served in a sour-cream sauce with onions and mushrooms. Beef Stroganoff is an aroma rich dish with its lemon creamy texture and is particularly brilliant served over rice, noodles or potatoes. This is the recipe I use all the time at home with enormous success.


Ingredients serve 8

1.4 kg blade steak
½ teaspoon ground pepper
1 teaspoon salt
100 g butter
1 large (200 g) onion
200 g mushroom
1 liter cream
1 lemon zest and juice
pinch of nutmeg
parsley


Method

Trim the fat off the blade steak and cut into strips 5 cm long and 1 cm wide.
Melt the butter in a saucepan and seal the meat.
Slice the mushrooms, dice the onions and add to the saucepan.
Add cream, lemon zest and juice, seasoning with salt, pepper and nutmeg.
Bring to the boil for 5 minutes and let it simmer for 1 hour (until the meat is tender).
Serve on a bed of mashed potatoes and garnish with chopped parsley.
Place leftover Beef Stroganoff in closed containers and store in the freezer for reheating in the microwave when needed.


Note: Place ingredients for Beef Stroganoff in a Slow Cooker for 4 hours on high or 8 hours on low.
