Strawberry Whoopie Cake Pop Gateau

Strawberry, vanilla and toasted nuts are wonderful flavours to combine in a dessert.


Ingredients make 14 slices

800 g vanilla sponge
1000 g Strawberry mousse
200 g toasted split almonds
14 Whoopie cake pops

Method

Cut the 30 cm round vanilla sponge in three layer and place the bottom layer on a cake tray. Sprinkle some strawberry flavored sugar syrup on each layer. Spread strawberry mousse evenly on bottom sponge layer. Place another layer of infused sponge on top and spread strawberry mousse evenly. Place the last infused layer of sponge on top and cover the Gateaux in strawberry mousse. Wrap the side with toasted split almonds and divide the cake 14 pieces. Pipe a large rosette on each slice and place a Whoopie cake pop dipped in white chocolate.


Note: Try using flavoured buttercream instead of mousse.
