Popcorn Chicken Caesar Salad

This is a contemporary variation on the classic Caesar salad with popcorn chicken and is a great summer salad.


Ingredients serve 1

2 chopped cos lettuce leaves
1 finely chopped bacon rasher
1 boiled egg, quartered
8 pieces of garlic and herb croutons
6 pieces popcorn chicken
Caesar salad dressing
1 tbls grated parmesan cheese

Method

Place the bacon on a frying pan with 1 tablespoon of oil or butter and fry over medium heat while occasionally stirring until crispy. Set aside and allow cooling. Place the cos lettuce on a plate and sprinkle the cooked bacon evenly on top. Add the boiled egg, croutons and chicken. Drizzle dressing on the salad followed by the grated parmesan cheese. Serve straight away.


Note: Try making your own croutons with wholemeal or sourdough bread.
