Spritzgebäck is a crisp and fragile German
biscuit made of flour, butter, sugar and eggs. These cookies, also known as
spritz cookies, are made by squirting the soft dough with a press fitted with
patterned holes or with a pastry bag fitted with a nozzle.
Ingredients
makes 50
175 g soft butter
100 g caster sugar
12 g cocoa powder
1 eggs
½ tsp vanilla extract
250 g self raising flour
Method
Preheat oven to 170ºC normal bake. Place
butter, sugar and cocoa powder in a mixing bowl. Beat until light and creamy
with an electrical mixer. Add egg and vanilla, mix well. Add flour and blend
until evenly mixed. Load the cookie press from the backside and seal the gun
with the trigger. Press the cookie mixture onto baking paper or greased baking
trays. You can place ingredients on top of the cookies such as nuts, chocolate
or dried fruits otherwise leave them plain. Bake for approx. 10 minutes. Remove
cookies from the oven and allow cooling before placing in closed containers.
Note: If you are using unsalted butter add ½ tsp salt.
