Red Velvet Yogurt Cookies

These yogurt cookies with chocolate chip are similar to a soft and moist chocolate muffin top in texture.


Ingredients make 50 cookies

110 g soft butter
250 g plain yogurt
190 g sugar
125 g brown sugar
2 eggs (100g)
400 g plain white flour
50 g cocoa powder
1 tsp soda
1 tsp red food colour
200 g dark chocolate chips

Method

Preheat the oven to 180ÂșC normal bake. Place butter, yogurt and sugars in a large bowl and mix evenly. Fold the eggs in the mixture. Sift plain flour, cocoa and soda before adding to the batter. Add the chocolate chip and mix until consistently combined. Drop a tablespoon of cookie dough onto baking paper lined trays with 4 cm spaces in between. Bake for approx. 10 minutes. Allow cooling on the trays before serving. Keep cookies stored in airtight containers.


Note: If you are using unsalted butter add 1 tsp salt to the recipe with the flour.
