This dish is easy to make and the secret to making an
excellent Pad Thai is not over cooking the noodles.
Ingredients serve 2
150 g rice sticks noodles
2 tbls fish sauce
2 tbls lemon juice
45 g brown sugar
40 ml peanut oil
2 tbls chopped spring onions
2 tsp minced garlic
2 tbls chopped chives
75 g chopped unsalted peanuts
1 beaten egg
45 g bean sprouts
300 g cooked chicken
Method
Place noodles in a bowl covered with hot water and leave soaking
until tender and drain. Combine fish sauce, lemon juice and sugar in a bowl. Place
a wok over high heat with the oil and swirl to coat the wok Fry the onion and
garlic. Add noodles and stir-fry for 2 minutes. Add lemon juice mixture, chives
and peanuts, toss to combine. Pour beaten egg over the noodles and mix. Add
bean sprouts and toss the mixture. Spoon mixture into bowl and add sliced
chicken on top. Drizzle with chopped coriander and serve hot.
Note: Add other
ingredients such as prawns.
