Broccoli and Potato Mash

Broccoli and potato is an excellent combination and this tasty healthy potato mash is a superior side dish to a main meal with proteins such as grilled or sautéed fish.



Ingredients serve 4

200 g roughly chopped broccoli
600 g peeled and chopped potatoes
60 g butter
1 tbls fresh thyme leaves
100 ml cream
½ tsp sea salt
¼ tsp white pepper

Method

Place the potatoes in a saucepan covered with salted water over medium heat and bring to the boil. Simmer for 10 minutes and place a steam colander on top of the water. Add broccoli and cover, cook for further 10 minutes. Place cream, butter, salt and pepper in a saucepan over medium heat until mixture is warm, but not boiling. Drain the potatoes and broccoli and pass thru a ricer or mash with a potato masher. Add the liquid mixture while stirring. Serve warm with your choice of meat.

Note: You can also cook the broccoli in the microwave in a closed container instead of steaming.
