Clear Mushroom Soup

This clear mushrooms soup has a remarkable flavour and is perfect for a starter on cold winter days.


Ingredients serve 6

200 g sliced white cup mushrooms
60 g chopped green shallots
375 ml dry white wine
500 ml chicken stock
¼ tsp dried thyme
½ tsp white pepper
½ tsp salt

Method

Place all ingredients in a medium saucepan over medium heat and bring to the boil. Simmer covered for 60 minutes and serve.


Note: Try to serve this soup with croutons and chopped parsley.
