White Christmas Cake

This is an Australian crispy no bake slice great for Christmas using rice Bubbles. They are great fun for kids to have fun with in the kitchen. Wrap some of the slices in cellophane which can make great Christmas presents.


Ingredients make 8 slices

40 g long shredded coconut
40 g toasted almond slivers
40 g toasted and finely chopped pecan nuts
165 g mixed fruit such as sultanas, raisins, currants, cherries, lemon and orange peel
80 g Kellogg’s rice bubbles
420 g white chocolate
30 g shredded coconut for topping

Method

Chop pecan nuts and cherries and place together with coconut, fruit, almonds, pecans and rice bubbles in a bowl and mix evenly. Melt chocolate and pour into the dry ingredients and combine evenly. Place mixture in a baking paper lined 18 x 28 cm tray. Press evenly on top of the mixture with a flat hand or by using a rolling pin. Place 30 g shredded coconut on top and press again. Place the slice in the fridge for at least 15 minutes. Remove from the fridge and cut in 8 slices and keep stored in closed containers in the fridge.

Note: Try dark chocolate instead of white as a variation.
