Vanilla Sultana and Macadamia Parfait

This is a smooth straightforward ice cream to make at home.


Ingredients serve 12

1 can (400g) Nestle condensed milk
800 ml cream
1 tsp vanilla sugar
80 g sultanas
50 g chopped macadamia nuts

Method

Place cream and vanilla sugar in a bowl and whisk until a soft peak is reached. Fold the condensed milk into the whipped cream. Add sultanas and macadamia nuts and combine. Place mixture evenly in a greased 26 x 8 x 8 cm rectangular tin and cover with cling wrap. Place the ice cream in the freezer for at least 12 hours. Remove from the freezer and dip the bottom of the tin in hot water. Gently tap the tin while upside down until the ice cream is released from the tin. Place the ice cream on a plate and cut in slices before serving.

Note: Try other variations with added ingredients such as chocolate and caramel.
