Lemon Lime and Raspberry Parfait

This is a very simple process to make smooth and delicious ice cream at home.

Ingredients serve 12

220 g caster sugar
4 eggs
2 lemons, zest and juice
1 lime, zest and juice
60 ml citrus vodka or lemon schnapps
600 ml cream
150 g raspberries

Method

Place eggs and sugar in a mixing bowl and whisk until light and creamy approx. 8 minutes. Add zest, juice and citrus vodka. Whisk cream and fold into the egg mixture. Add raspberry and gently blend. Place mixture evenly into a greased 10 x 10 x 27 cm rectangular tin and cover with cling wrap. Place the ice cream in the freezer for at least 12 hours. Remove from the freezer and dip the bottom of the tin in hot water. Gently tap the tin while upside down until the ice cream is released from the tin. Place the ice cream on a plate and cut in slices before serving.

Note: Try other fruits such as blueberries, blackberries and strawberries.
