Strawberry Rosemary and White Chocolate Scones

These sweet fruit scones have the additional flavour of Rosemary.

Ingredients make 12 scones

350 g self raising flour
75 g caster sugar
8 g salt
100 g butter
200 g buttermilk
100 g finely chopped strawberries
100 g white chocolate finely chopped
2 tsp finely chopped rosemary leaves

Method

Preheat oven to 200ºC fan forced (220C normal bake). Place flour, sugar and salt in a bowl. Shred butter and rub into the flour mix with your hands. In another bowl combine chocolate, milk and strawberries add this mix to the flour and combine. Turn onto a lightly floured surface and pat the dough into a 3 cm thickness. Cut the scones with a 5cm scone cutter and transfer to a lightly floured tray or baking paper lined tray with space in between. Bake for approx 12 min. until golden brown on top. Dust with icing sugar.

Note: Try other chopped herbs instead of Rosemary such as mint.
