Banana and Cinnamon Yeast Cob Bread

This moist bread is made with yeast and ripe mashed bananas.


Ingredients make 1 loaf

250 g mashed bananas
40 g butter
170 ml milk
30 g caster sugar
1 tsp salt (6g)
350 g white bread flour
1 tsp cinnamon (3g)
1 sachet yeast (7g)

Method

Place bananas, butter, milk, sugar and salt in a mixing bowl and combine. Add flour, cinnamon and yeast, combine to make dough. Knead the dough by hand or machine until smooth and rest covered for approx. 60 minutes in a covered bowl. Dust flour on the kitchen table and shape the dough into a round ball and place on a baking tray. Allow proofing for approx. 50 minutes. Preheat oven to 180ºC normal bake.  Make cuts with a sharp knife on top of the dough and bake the bread in the oven for approx. 30 minutes. Remove bread from the oven and allow at least 20 minutes cooling on a wire before cutting.


Note: This basic banana milk bread can be enhanced with ingredients such as honey, vanilla and lemon.
