Gluten Free Chocolate Crackle Slice

This is a crispy no bake slice great as a snack and so easy to make.

Ingredients make 8 slices

40 g long shredded coconut
80 g chopped toasted almonds
165 g sultanas
80 g rice bubbles
420 g chopped dark chocolate
40 g vegetable shortening
30 g toasted shredded coconut for topping

Method

Place coconut, almonds, sultanas and rice bubbles in a large bowl and mix evenly. Melt chocolate and shortening. Pour the chocolate mixture into the dry ingredients and combine evenly. Place mixture in a baking paper lined 18 x 28 cm tray. Press evenly on top of the mixture with a flat hand or by using a rolling pin. Place 30 g toasted shredded coconut on top and press again. Place the slice in the fridge for at least 30 minutes. Remove from the fridge, cut into 8 slices and keep stored in a closed container in the fridge.

Note: Mixture can be placed in paper cups as an alternative to cutting into slices.
